Organic Raw Food: Pass the Veggies!

Would you consider an organic raw food diet?

That means veggies, veggies and more veggies!

And No, ketchup is not considered a vegetable serving!!

To me, a meal full of fresh vegetables sounds amazing, but to the general public who may still have an aversion vegetarianism, there is even less chance that they will want to come to my house for a vegan, gluten-free, organic raw food home cooked meal!

But before you click the 'back' button and disregard this article, please give me a moment to explain the benefits and hazards of a raw food diet.

The Benefits to an Organic Raw Food Diet

If you have ever met a true raw foodist, you will know that they can be over the top excited to share with you various diet and health tips.

And for good reason... Nutritionist Experts and Guests on the documentary film "Food Matters" speaks to us about why eating raw is so important:

  1. Food should be a priority: David Wolfe poignantly shares his views that we have our priorities backwards. That we would rather spend money on expensive cars and big houses than on quality organic raw food. We would rather have the latest fashions hanging in our closet than to nourish our children with rich food sources.

  2. Food should be 51% raw: According to Dr. Paul Kouchakoff, MD, studies from the 1930s have shown us that cooked food actually increases white blood cells in the body, as if it were attacking an invading virus or bacteria. In order to eliminate an immune reaction to our food, we need to eat at least 51% of each meal as raw.

  3. Heating/Cooking destroys food nutrients: According to many authors, heating food above 118 degrees will destroy 50% of the protein in our food, 50% of the vitamins and 80% of the minerals, as well as all the enzymes. And when food is cooked/boiled above 212 degrees, the enzymes are 100% destroyed, thereby requiring the body to work harder and produce the enzymes needed for digestion.

  4. Raw Food is Alkaline: (link to alkaline foods) Science now shows us that cooking not only destroys vital enzymes and nutrients, but also chemically alters food creating acid-forming toxins and free-radicals that destroy our health!

  5. Raw Food can 'Cure': There is evidence that rats on a cooked diet have a pancreas about twice as heavy as rats on a raw diet. The overproduction of pancreatic enzymes is a pathological adaptation to a diet of enzyme-free foods. And many studies have shown raw organic food diets to 'cure' diseases such as diabetes, thyroid conditions, cancers and auto-immune disorders.

The Hazards of an Organic Raw Food Diet

I personally enjoy eating an organic raw diet and preparing raw food for my family. I do so with the special and sacred use of my Vitamix Blender and Excalibur Food Dehydrator, however, I am not 100% raw and I'll tell you why.

I don't feel well when I eat a fully raw diet... and in my opinion, there is no better scientific research study than your own feelings.

Personally, I have a lot of air in my constitution...according to my husband, this may mean 'hot air', but according to Ayurvedic medicine, it means I am very light and need grounding foods to counterbalance my energetic constitution.

This means I need to eat earthy foods like squash, sweet potatoes and beet, all of which work well when heated. While cooking can destroy things like vitamin C, it helps with the absorption of carotenoids such as beta-carotene and other nutrients.

This is why many nutritionists recommend a mix of some raw products with cooked food, depending on your body make-up.

The other point I'd like to make is that many people disagree with a total organic raw food diet, but I believe it is because they are missing the critical importance of a technique called sprouting.

Sprouting is where you soak seeds, nuts, beans and grains prior to consuming them. This allows for the enzyme inhibitors to be destroyed thereby making them more easily digestible. Also, scientific studies have shown that sprouting increases the nutritional value of seeds and nuts anywhere from 50% to 400%.

Cooking is the other way to destroy enzyme inhibitors, but cooking also destroys much more of the nutrient content, and therefore sprouting is a way to increase the 'liveness' of your food.

Final Message of the Organic Raw Food Diet:

In essence, eating fresh vegetables, sprouts, super-foods, nuts and seeds is essential for health. So lighten up on the stove and find a new balanced you!
